Loaded Baked Potato Salad



Ingredients
  • 3 pounds small unpeeled red potatoes, cubed
  • 1 pound sliced bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 3 cups sour cream

Instructions
  1. Place the potatoes in a greased baking pan; sprinkle with salt and pepper.
  2. Bake, uncovered, at 425° for 40-45 minutes or until tender.
  3. Let cook in pan.
  4. In a large bowl, combine the potatoes, bacon, cheese, and onion.
  5. Add sour cream and mix.
  6. Salt and pepper to taste.
  7. Serve as soon as you would like!
