Easy Lemon Magic Pie

The best thing about this pie – besides it’s amazing flavor and fluffy texture – is that it basically comes out of the oven as the filling AND the crust, all in one.
Plus, it’s just so easy to make. It’s essentially a one-pot dessert, with all the ingredients you need being whisked in one bowl. All you have to do besides that is pour the mix into a bake-friendly dish and let the oven go to work!
One thing is for sure: your kitchen is going to smell amazing.

EASY LEMON PIE
INGREDIENTS
– 3/4 cup sugar
– 4 eggs– 1/2 cup melted butter
– 2 cups milk
– 1 tsp. vanilla extract
– 1/2 tsp. lemon zest
– 1/2 tsp. lemon juice
– 1 cup coconut flakes
– 1/2 cup flour
DIRECTIONS
1. In a bowl, combine sugar and eggs. Whisk together to combine.
2. Add melted butter and milk. Whisk to combine.
3. Add vanilla extract, lemon juice, and lemon zest. Whisk.
4. Add coconut flakes and flour. Whisk to combine.
5. Pour mixture into a bake-safe dish. Bake at 350 F. for 45-50 minutes.
6. Top with whipped cream and blueberries – Enjoy!

Oven Baked Tacos



Ingredients

2 lb ground beef (or ground turkey)
1 can refried beans
1 can of tomato sauce
1 packet taco seasoning
1 oz shredded cheese
12 tortillas/taco shells
Serve with your favorite toppings…...


Directions
Start with the taco shells, buy them in the store or make em yourself. If you make them yourself, I don’t think you will ever go back to purchasing taco shells. All you need is some tortillas and cooking spray. We used some small, soft “taco” tortillas. We used the flour kind but corn is fine too.

First you want to steam them… Wet some paper towels and wring them out well. Layer the tortillas with the wet paper towels on a plate and then microwave (we did 6 at a time). Keep an eye on them, it should be about 30 seconds until they are steamed. Then lightly spray each side with cooking spray and drape each tortilla over two bars of the oven rack. It is wise to put a baking sheet below them to catch any oil from the cooking spray. Bake at 350-375 degrees for 7-10 minutes. You will be able to tell that they are browning & getting crispy. Take them out and set them aside!

Okay, now for the filling All you need is ground beef (2 pounds), 1 can of refried beans, 1 can of tomato sauce, 1 packet of taco seasoning, shredded cheese, & your favorite taco toppings.

Brown the ground beef in a large skillet. COMPLETELY drain all grease and return to skillet. Over low heat, add refried beans, taco seasoning, and about half to two-thirds of the tomato sauce (you can eye this to see whats best, you don’t want the filling to be too runny or your tacos will be soggy on the bottoms). Blend well and scoop into the tacos (which should be “standing” in a lightly greased casserole type dish). Then just sprinkle the cheese over the top and bake. I think I did my at 375 degrees for about 10 minutes.
Serve with your favorite toppings….

Easy Ding Dong Cake


Ding Dong Cake
Cake 1 box of Chocolate cake mix,
bake as directed, , 

when cake is done let sit 10 min ,
then turn out on cooling rack, when cooled, slice cake in half,
put one half back in bottom of pan, 

Icing, 
1  cream cheese softened, 3 cups powered sugar, 1 stick butter softened, mix together with mixer, fold in 1 container of cool whip, spread on cake layer in pan, then put other layer on top,
the take 1 can of chocolate icing add 2 tbsp of milk stir up well ,spread on cake , Keep in fridge

Sparkling Pineapple Lemonade

Ingredients:
1 quart lemonade
1 quart pineapple juice
1/2 quart sparkling grape juice
Directions:
In a large plastic container, mix 1 quart of lemonade and 1 quart of pineapple juice. Stir together.
Then add 1/2 quart sparkling white grape juice.
If you want extra fizz, add some extra grape juice.

My Requested Bailey's Frosting

1. Combine 1 stick of butter and ¼ cup confectioners’ sugar in a stand mixer fitted with the paddle attachment. Cream together on medium-high for 2-3 minutes, until fluffy and pale yellow.

2. Whisk together ¼ cup Baileys Irish Cream, 
½ teaspoon coffee powder (optional)  and ½ teaspoon salt in a small bowl.

3. On low speed, gradually stream in the Baileys liquid. After 1-2 minutes of paddling, the results will be a fluffy Baileys frosting, pale brown and super shiny. Use immediately.

Satisfy your sweet tooth with a Baileys Chocolate Chip Cookie Milkshake. Go Ahead, you deserve it. ðŸ˜‰
Recipe: Serves 2. Add 2.5 cups coffee ice cream, 1.5 cups milk, 1/2 cup Baileys™ Original Irish Cream, 2 large chocolate
chip cookies, and 6 ice cubes to a blender. Blend until almost smooth, with some small pieces of cookie. Pour in glasses and top with more cookies or chocolate chips. Enjoy!

Stuffed Breakfast Avocados


4 avocados
5 oz. smoked salmon, cut into thin strips
16 baby spinach leaves
8 eggs
Kosher salt, to taste
Freshly cracked black pepper, to taste
1/2 tsp. crushed red pepper flakes
Chopped chives, for sprinkling
1. Preheat oven to 425°F.
2. Halve the avocados and remove the seed. If the hole looks small, scoop out some flesh until it’s large enough to hold an egg.
3. Place the avocado halves skin-side down on a cookie sheet, and line the holes with strips of smoked salmon and spinach leaves. Crack one egg into a small bowl, then spoon the yolks and egg whites into the avocado hole. Season with salt and black pepper.
4. Bake for 15-20 minutes, or until the eggs are set but the yolks are still runny. Sprinkle with chili flakes and chives, and serve.

Nana Rose's Lemon Bars

A tender pastry crust with a smooth lemon filling and a topping of powdered sugar.

Crust:
2 cupsFlour
½ cupPowdered Sugar
sticksButter, softened
Lemon Filling:
4Jumbo Eggs
2 cupsSugar
10 TbspLemon Juice
4 TbspFlour
½ tspBaking Powder
Powdered Sugar, to taste
Directions:
Crust:
Mix together flour and sugar then cut in butter. Press into an ungreased 9 X 13 glass baking dishMake a ridge around the edge and bake at 350 degrees for 15-20 minutes.
While crust is in oven, beat eggs slightly, then add sugar and lemon juice….
Fold in flour and baking powder. When crust is done, pour mixture over baked crust and bake another 25 minutes.
Cool completely and sprinkle with powdered sugar.
Helpful...
Lemon bars can be cut smaller or bigger, whatever your preference.


Best Strawberry Cake


1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant gelatin
1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
½ cup vegetable oil
¼ cup water

Strawberry cream cheese frosting, recipe follows
Strawberry Cream Cheese Frosting
¼ cup butter, softened
1 (8-ounce) package cream cheese, softened
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
½ teaspoon strawberry extract
7 cups confectioners’ sugar
Freshly sliced strawberries, for garnish, optional


How to make it :

Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
For the frosting:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in ¼ cup of the strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners’ sugar, beating until smooth.
Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

Do Nothing Cake




Do Nothing Cake

2 cups all purpose flour

2 cups granulated sugar
2 eggs, slightly beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 large can (20 Oz) crushed pineapple with juice
Frosting :
1 stick (1/2 cup) butter
1 cup sugar
1 can (5½ ounce) evaporated milk
1 cup chopped walnuts or pecans
1 cup shredded coconut

How to make it :

Preheat oven to 350 degrees F.
In a large bowl, Whisk together all the batter ingredients until just combined.
Pour into a greased 13×9 baking dish, and bake for 30-40 minutes or until a wooden toothpick, inserted in the middle comes out clean. Don't overbake.
While cake is still baking, prepare the frosting.
Heat the butter, sugar, and evaporated milk in a small saucepan until boiling.
Cook and stir for about 5 minutes, or until slightly thickened.
Remove from heat and add in the coconut and pecans.
Remove the cake from oven, and using a kabob skewer or wooden spoon handle, or some similary-sized object, begin poking holes in the cake.
You need holes so that hot frosting has plenty of room to get down and soak the cake.
Pour frosting over the hot cake, spreading it out to make sure it’s all evenly dispersed.
Allow cake to cool for a bit before cutting.
Due to the frosting seeping into the cake, it is very moist!

Roasted Sweet Potatoes


Ingredients

  • 3 Sweet potatoes, peeled and cut into bite size cubes
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1 tbsp of brown sugar (more if you want it sweeter)
  • 1 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • Pinch of ground ginger
  • Sea salt, to taste

Directions


Preheat the oven to 350 degrees. Coat a small baking dish with cooking spray. Peel and dice the sweet potatoes into bite size cubes and place in the baking dish. Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt. Add more sugar or cinnamon if desired. Toss to coat evenly.
 
Bake in the oven for 60 minutes. Stir the sweet potatoes once or twice during roasting. Enjoy.

Cheesy Baked Asparagus



Cheesy Baked Asparagus
1 bunch of asparagus, woody ends trimmed...
3 T. butter, melted
1/2 tsp. my house seasoning (equal parts garlic powder, onion powder andpepper...combine and store in an airtight container)
1 T. grated parmesan cheese
3/4 C. shredded mozzarella cheese
italian seasoning
Line a baking sheet with some tinfoil. Place the asparagus on the baking sheet and drizzle with the melted butter. Sprinkle the house seasoning and parmesan cheese over the top. Place in a 400 degree oven for 15 minutes. Remove and top with the mozzarella cheese and a little sprinkling of italian seasoning over the top. Return to the oven for an additional 5-7 minutes to melt the cheese and let it begin to brown.

Italian Tortellini Salad
The perfect pasta salad for any pot-luck, picnic, cookout or backyard barbecue! This delicious tortellini salad is loaded with all of your Italian favorites, like salami, tomatoes, olives, banana peppers, red onion, and topped with Italian dressing and shredded Parmesan cheese! The ultimate side dish for any meal!
Ingredients
  • 10 oz. small or medium cheese tortellini pasta (tri-color or regular)
  • 1 (5 oz.) pkg, mini pepperoni's
  • 1 c. cherry tomatoes (red and/or yellow), quartered
  • 1 (3.8 oz.) can, black olives, drained
  • ½ c. red onion, diced
  • ½ c. jarred mild yellow banana peppers, chopped
  • 1 c. Italian salad dressing
  • 1 c. shredded Parmesan cheese
  • pepper to taste

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water. Let set to cool.
  2. In a large mixing bowl, add the mini pepperoni, tomatoes, olives, red onion, and banana peppers. Toss with the cooled tortellini pasta. Add the dressing and cheese and toss all ingredients to coat. Refrigerate for at least 1 hour before serving. Serve chilled.
  3. Store in an air-tight container for up to 1 week.

Serves: 6-8
INGREDIENTS
  • 2 L 7UP® or Diet 7UP®
  • ½ gallon Raspberry Sherbet
  • 2 Tbs lime juice
  • 2 Tbs lemon juice
INSTRUCTIONS
  1. In a blender mix together the sherbet and half the bottle of 7UP®, with the lemon and lime juice
  2. Stir in remaining 7UP®, and serve cold!
NOTES
*Fresh squeezed lime and lemon juice is best, but bottled works too
*I always split this into 2 batches so my food processor can handle the capacity without 7UP® spraying all over the place, but you can mix it by hand, or in a large capacity blender as well.
