Crust: | |
2 cups | Flour |
½ cup | Powdered Sugar |
2 sticks | Butter, softened |
Lemon Filling: | |
4 | Jumbo Eggs |
2 cups | Sugar |
10 Tbsp | Lemon Juice |
4 Tbsp | Flour |
½ tsp | Baking Powder |
Powdered Sugar, to taste | |
Directions:
Crust:
Mix together flour and sugar then cut in butter. Press into an ungreased 9 X 13 glass baking dish. Make a ridge around the edge and bake at 350 degrees for 15-20 minutes.
While crust is in oven, beat eggs slightly, then add sugar and lemon juice….
Fold in flour and baking powder. When crust is done, pour mixture over baked crust and bake another 25 minutes.
Cool completely and sprinkle with powdered sugar.
