Grilled Caesar Salad

Grilled Caesar Salad
Prep Time: 10 minutes
Cook Time: 5 minutes
Serves: 6
SHOPPING LIST
3 romaine lettuce hearts; cut in half lengthwise to make 6 pieces
2 tablespoons olive oil
Kosher salt and black pepper
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
2 cloves fresh garlic, thinly sliced or chopped
2 tablespoons shaved parmesan cheese
1. Light or preheat a grill to medium-high to high.
2. Lay the romaine lettuce heart halves face up on a sheet pan and drizzle all with olive oil, and sprinkle liberally with salt and pepper.
3. Grill the romaine hearts face down for about 3 minutes or just until grill marks form; turn over and cook for about 2 minutes more.
4. Remove from heat, drizzle with lemon juice and serve immediately topped with lemon zest, shaved fresh garlic and Parmesan cheese. Garnish with lemon wedges if desired.
HELPFUL HINTS
While I am grilling the romaine, I like to throw veggies I may have in the fridge alongside it: such as cherry tomatoes, red onion and even mushrooms and then top my grilled salad like a pizza!
