Chocolate Cheesecake Muffins
Filling
- 1 8oz. cream cheese
- 1 egg
- 1 cup chocolate chips
- ⅛ teaspoon salt
- ⅓ cup sugar
- 1 tablespoon lemon juice
Muffin
- 1½ cup flour
- 1 cup sugar
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup water
- ½ cup cooking oil
- 1 tablespoon white vinegar
- 1 teaspoon vanilla
Instructions
- Combine all ingredients for the filling and set aside. Sift the dry ingredients. Mix water, oil, vinegar, and vanilla. Mix until well blended. Line muffin pan with paper liners.
- Fill 1/3 full and then add 1 tablespoon cream cheese mixure. Then fill with batter to 2/3 full.
- Bake at 325° F for 24 to 26 minutes. Serve with a cold glass of milk.
