Chocolate Cheesecake Muffins

Chocolate Cheesecake Muffins



Filling
  1. 1 8oz. cream cheese
  2. 1 egg
  3. 1 cup chocolate chips
  4. ⅛ teaspoon salt
  5. ⅓ cup sugar
  6. 1 tablespoon lemon juice
Muffin
  1. 1½ cup flour
  2. 1 cup sugar
  3. ¼ cup cocoa powder
  4. 1 teaspoon baking soda
  5. ½ teaspoon salt
  6. 1 cup water
  7. ½ cup cooking oil
  8. 1 tablespoon white vinegar
  9. 1 teaspoon vanilla
Instructions
  1. Combine all ingredients for the filling and set aside. Sift the dry ingredients. Mix water, oil, vinegar, and vanilla. Mix until well blended. Line muffin pan with paper liners.
  2. Fill 1/3 full and then add 1 tablespoon cream cheese mixure. Then fill with batter to 2/3 full.
  3. Bake at 325° F for 24 to 26 minutes. Serve with a cold glass of milk.
