1 lb. Minced Beef
1 Pack of Dubliner Cheese
1 Medium Onion Chopped
1 Clove of Garlic Chopped
4 Large Peppers
Chili Seasoning (use either a packet of Taco seasoning or mix 2tsp cumin, 2tsp smoked paprika, 1 tsp chili powder, 1tsp salt and a pinch of sugar)
Vegetable Oil

- Pre-heat your oven to 180C. Heat your frying pan, fry the onion and garlic until translucent. Add the minced beef and fry until browned.
- Add the spice and two tablespoons of water and continue to cook for 2 minutes. Add a splash more water if the mixture is too dry.
- Split the peppers length ways and remove the seeds but you can leave the stalks on. Fill each pepper half with the chili beef and top with the grated cheese.
- Bake in the oven for 20 minutes until the pepper is cooked and the cheese is bubbling and brown.
Serve with a green salad and some rice.
VARIATIONS:
For a vegetarian version substitute cooked savoury rice and lightly fried finely chopped courgettes and aubergines for the meat.
