Biscotti Ricotta

Biscotti Ricotta - pacman emoticon
Ingredients
4 eggs
1 cup- sugar
1 lb- Ricotta
1/2 cup butter
2 tsp. vanilla
3 1/2 cup- flour
4 tsp. baking powder
glaze
sugar sprinkles



Preparation
Mix butter, ricotta, eggs, baking powder and vanilla then add flour and knead then make balls and put on parchement paper and bake 200°C/400°F for 10 min.
Garnish with glaze and sugar sprinkles.


 Glaze---
 Makes 2 cups
 2 cups confectioners' sugar
2-2 1/2 tablespoons warm water
1 teaspoon vanilla extract, or orange juice (or lemon or lime juice)
Food coloring, if desired
