Apple Slaw
If you’re not a big fan of coleslaw, this dish will win you over. If you already love a good slaw, prepare for the bar to be raised.
1/3 cup extra virgin olive oil
2 tablespoons grainy mustard
1 tablespoon honey
juice from one lime
3 cups purple or green cabbage, shredded
3 Granny Smith apples, diced
2 carrots, peeled and grated
1/2 cup chopped cilantro
salt and pepper, to taste

In a large bowl, whisk together the olive oil, mustard, honey and lime juice. Add the cabbage, apples and carrots into the same bowl, and combine with dressing. If desired, add salt and pepper to taste. Cover and chill in the fridge for at least an hour. Add the chopped cilantro right before serving.
