Polpette Patate&Spinaci

Ingredients
100% Organic Extra Virgin Olive oil
1 lb- spinach
4 potatoes
2 eggs
bread crumbs
parmigiano
salt
black pepper

Preparation
Wash spinach and boil in salted water then drain.
Wash potatoes and boil in salted water then drain and put in the potato masher.
In a bowl put potatoes, spinach, parmigiano, breadcrumbs, salt, pepper and beaten eggs then mix.
In the end add breadcrumbs until the mixture is consistent.
Make polpette and fry in plenty of extra virgin olive oil hot.
Serve.
