Artichoke Salsa

Artichoke Salsa
 
Artichoke Salsa is fresh, healthy, colorful, delicious, and full of awesome flavor. It would work great as an appetizer with chips, or as a topping for seasoned chicken.

Ingredients
  • 1 6.5 oz. jar marinated artichoke hearts, drained and chopped, but reserve 2 T. marinade
  • ½ c. black olives, sliced
  • ½ c. grape tomatoes, sliced
  • 2 cloves garlic, minced
  • 2 T. fresh basil, finely chopped
  • 1-2 T. capers (I used 2)
  • 3 green onions, thinly sliced
  • 1 jalapeno, seeded and diced
  • salt and pepper to taste
Instructions
  1. Combine all ingredients in a large bowl and mix well
  2. Cover and refrigerate for at least an hour before serving
