APPLE, ORANGES AND CUCUMBER SALAD
INSALATA DI ARANCE, MELE E CETRIOLI

For 1 serving.
•1 unwaxed orange
•1 organic Granny Smith apple
•1 medium courgette
•1 medium carrot
•1/2 cucumber
•1 thin slice of white cabbage
•Fontina cheese cubed
•black pepper
•extra virgin olive oil
The composition of this dish is straightforward.
Grate the courgette and place in a colander, grated the carrot, slice the cucumber and thinly sliced the cabbage. Segment the orange, squeeze the courgette and place both in a bowl with the carrot, cucumber and cabbage. Thinly slice the apple and add it to the other ingredients together with the cheese. Season with black pepper, and a dribble of oil and serve.
I didn’t use any salt deliberately because the sweetness of the fruits contrasts deliciously with the vegetables and I find that salt spoils this delicate balance.
