Oatmeal Pumpkin Cookies
A super easy, no mixer, cookie recipe that is loaded with tons of flavor while still low in calories...
Ingredients
2 cups flour + 1 tbsp. flour
1 tsp baking soda
2 tsp pumpkin pie spice
1/2 tsp salt
1 1/2 cups old fashioned oats
1 cup butter
1/4 cup molasses
1 cup brown sugar
1/4 cup sugar
1 egg yolk
3/4 cup pumpkin puree
2 tsp vanilla extract
*1/2 cup chocolate chips
*1/2 cup white chocolate chips
*1/2 cup dried cranberries
Instructions
1.Preheat oven to 350
2.Line cookie sheets with parchment paper, or silicone mats
3.In a large bowl mix together flour, baking soda, pumpkin pie spice and salt
4.Add in oats, stirring to combine, set aside
5.In a microwave safe bowl melt butter
6.Whisk in molasses, brown sugar and white sugar until well combined
7.Whisk in egg yolk
8.Add in pumpkin and vanilla and whisk until well combined, mixture should be thick
9.Pour into dry ingredients and gently stir, mixing only until just combined
10.Fold in your add-ins; you can use any combo of chocolate chips, nuts or dried fruits you prefer, just make sure they equal 1 1/2 cups total, mixing until just combined
11.Using a small cookie scoop place cookie dough on prepared cookie sheets about 2 inches apart
12.Bake for 13-15 minutes, or until the edges or lightly browned
13.Allow to cool on baking sheet for 5 minutes and then remove to wire cooling racks
14.Store in air tight container for up to 10 days
