Craving pizza? Trying to stay away from all those carbs? You’ll love this recipe! It feels like an indulgence, but is very low in carbs and high in protein.
Ingredients
4 ounces light cream cheese, softened
2 whole eggs
3 egg whites
1/3 cup heavy cream
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon Italian seasoning
4 cloves garlic, minced
1/2 cup tomato sauce (sugar-free; try Bella Vita Low Carb)
3 cups mozzarella cheese
12 ounces cooked chicken breast, cut into strips
3 shallots, thinly sliced
6 ounces mushrooms of choice, sliced
Few sprigs of fresh basil
Salt and pepper to taste

Directions
Preheat oven to 375.
In a blender, combine cream cheese, eggs, and egg whites, blend until smooth. Add heavy cream, Parmesan, garlic, and Italian seasoning.
Spray a 9 x 13 pan with cooking spray, liberally. Spread 2 cups of the mozzarella cheese over the bottom of greased pan, lining the entire bottom of it. Pour cream cheese mixture over the mozzarella. Bake for 30-35 minutes, until the “crust” becomes solid and firm.
In the meantime, spray a non-stick saute pan with cooking spray, and saute the onions together with mushrooms, adding salt and pepper to taste.
Remove the crust from the oven, and spread the tomato sauce over it in a thin layer. Add chicken strips and sauteed mushrooms and onions over the tomato sauce. Sprinkle torn basil leaves over the toppings, and cover with the remaining 1 cup of mozzarella cheese.
