Homemade Low Carb Bread

Ingredients
1 1/2 cups blanched almond flour
3/4 cup arrowroot powder
1/4 cup golden flaxseed meal
1/2 teaspoon sea salt
1/2 teaspoon baking soda
4 eggs
1 teaspoon honey
1 teaspoon apple cider vinegar

Directions
1. Rose Victoria's  Tips: Do not substitute any of the ingredients to achieve the best results. Do not leave out the vinegar or honey as it is needed to activate the soda or your bread won't rise. The recommended pan is a 7.5' X 3.5" Magic Line Loaf Pan, available at Amazon.com for a reasonable price. I bought two of the recommended pans, but they haven't arrived, yet. I used a small pyrex bread pan lined with parchment paper to try the recipe. I greased the pan and put in the parchment paper and greased that, too. Parchment paper helps to get the bread out of the pan. Do not use a regular size bread pan because your bread won't rise. A mini loaf pan is too small, this pan makes a small loaf bigger than a mini pan and smaller than a regular loaf pan.
2. In a medium bowl, combine almond flour, arrowroot powder, flax meal, salt and baking soda. Place cracked eggs in a bowl.
3. In a large bowl, blend eggs with a hand mixer 3 to 5 minutes until frothy. Stir in the honey and vinegar into the eggs.
4. Cook's Tip: About mixing the dough, once you start to incorporate the egg mixture into the flour, you must handle the batter very gently.
5. Stir with a scraper spoon down the sides of the bowl and folding the batter over each time with the scraper spoon and ONLY until the flour is moistened--or your bread will be tough. Mix dry ingredients into the wet ingredients.
6. Spoon the batter into the prepared pan. Bake at 350 for 30 to 35 minutes, and test with a toothpick. It took 50 minutes for my bread to get done, so all ovens are different. Let the bread cool in the pan on a rack. When it is cool, slice it and wrap in a paper towel and put it in a ziplock bag.

8. It makes nice thin slices.
