Organic Vegetables with Rotini



Top


Ingredients:

6 cloves of garlic (minced),
 2 tbsp Extra Virgin Olive Oil
, 1 medium organic zucchini (sliced and halved),
 1 medium organic summer squash (sliced and halved), 
1 organic ear of corn (removed from cob),
 1 medium organic orange bell pepper (diced), 
1 bunch parsley (roughly chopped),
 8 oz organic fresh green beans (cut into 1.5inch pieces), 
1 can organic diced tomatoes

Salt and Pepper to Taste
 1 lb. rotini (cooked al dente)
Grated Parmesan or Pecorino Romano cheese



Directions:

1) Heat oil in pan over medium heat.
 2) Add garlic and cook until fragrant.
 3) Add zucchini, summer squash, bell pepper and green beans. Cook over medium heat until al dente.
 4) Add diced tomatoes, corn, and parsley. Salt and Pepper to Taste.
5) Simmer for 5 minutes.
 6) Remove vegetables from heat
 7) Add al dente rotini to the pan and mix with the vegetables.
 8) Serve the dish to your family and friends for a delicious and healthy meal.
Top with Grated cheese....
