Ingredients:
2 Tablespoons of Olive Oil
1 Large Egg Plant
2 Slices of Itailian Bread
1 Cup of Milk
1 Cup of Bread Crumbs
2 Eggs
1 Teaspoon of Kosher Salt
1 Teaspoon of Black pepper
1 Cup of Parmasian Cheese
2 Tablespoons of Olive Oil
1 Large Egg Plant
2 Slices of Itailian Bread
1 Cup of Milk
1 Cup of Bread Crumbs
2 Eggs
1 Teaspoon of Kosher Salt
1 Teaspoon of Black pepper
1 Cup of Parmasian Cheese
Directions:
First Peal the egg plant and dice into 2 inch peices.
Boil the Egg Plant peices for 10 minutes.
Drain the egg plant ,and leave it sit until cool.
Mean while,
Place the two slices of itailan bread in a bowl and cover with the milk, and let the bread absorb all the milk.
Squeeze all the milk from the bread,and put into a lrage bowl with, the bread crumbs,2 eggs,salt,pepper and parmasian cheese.
Go back to the Egg Plant and squeeze out all the water ,and place into a food processor.Blend on low ,just to grind it up. Add the egg plant mixture to the large bowl with all the other ingredients and mix together by hand until firm.
Form into 2 oz balls,and set aside.
Heat a large skilet ,with 1 table spoon of Olive Oil spread over the eggplant balls,and the other table spoon of Olive Oil in the pan,add the egg plant balls and saute until cooked,around 5 minutes.
Add the egg plant balls to your favorite marinara sauce and simmer for 1 hour!
