Roasted Eggplant, Tomato, and Mushrooms with Balsamic Dressing


1 large Eggplant, sliced 1 inch thick and quartered
5 medium vine ripened Tomatoes, quartered
1 – 8 oz. package button Mushrooms

Ingredients for Dressing:
¼ cup Extra Virgin Olive Oil
2 Tbsps. Balsamic Vinegar
Juice of ½ of a Lime
1 tsp. Sea Salt
3 cloves Garlic, minced
Cracked Black Pepper to taste


1. Preheat the oven to custom broil at 400 degrees.
2. Combine the ingredients for the dressing.
3. Place the prepared vegetables in a large mixing bowl. Pour the dressing and mix well.
4. Broil for 35 minutes in a roasting pan.
5. Remove from the oven and let the vegetables rest for 7 minutes before serving. Enjoy!
