Pepper and Egg Sandwich

This classic sandwich can be made in home kitchens.  You don't have to be a trained chef to create one, but sometimes it helps to have a recipe to follow…


4  green peppers, washed, seeded and sliced  (I like red bell pepper mixed with the green peppers)
4  large eggs
1/4  cup olive oil
Grated Parmesan or Romano Cheese
Salt and Pepper to taste
Crusty bread of choice, sliced Italian or French
Mild or Hot Giardiniera
Optional add some sliced provolone to your sandwich and/or fresh sliced tomato ..Delish!!!

Heat olive oil in skillet and add green peppers, stirring often cooking them to your taste - al dente or softened.  Season eggs with salt and pepper, add grated cheese and whisk them well.   Once peppers are cooked to your liking, pour on the peppers and cook until set.   Place on slices of crusty bread.  Add Hot or mild Giadiniera.   And I love to add slices of provolone and fresh tomatoes to my sandwich!!!
