Rotelle Melanzane

Ingredients
100% Organic Extra Virgin Olive Oil
2 Eggplant
2 tomatoes
black olives pitted
capers desalted
parsley chopped
bread crumbs
salt
black pepper
Preparation
Cut in slices the eggplant.
In a bowl mix diced tomato, extravirgin olive oil, capers, olives, parsley, salt and pepper.
Then garnish eggplant with mixture and sprinkle with breadcrumbs.
Bake at 200 ° C / 400 ° F for 20 min.
Serve.
