Stovetop Minute Rice Pudding


- 3/4 c minute rice
- 1/4 c white sugar
- 1/4 tsp nutmeg  
- 1 1/2 c milk
- 3/4 c sun-maid raisins
- 1 tsp vanilla extract
Cinnamon


1.   In a pot, add and cook all the ingredients (except vanilla) till it comes to a boil, stirring occasionally.

2.   Remove pot from heat and stir in vanilla. Cover pot until moisture is absorbed and pudding is creamy (about 5 mins).

3.   Sprinkle with a dash of cinnamon. Serve warm with a scoop of vanilla ice-cream or by itself. (I like to add a little milk to mine instead of ice-cream) 
- makes 4 small servings
