Low-Carb Cheesy Ground Turkey "One Skillet" Helper

 

Ingredients:

2 Tbsp. canola oil
2 cups chopped celery
1/2 cup chopped red onion
1/2 cup chopped red bell pepper (may use roasted in a jar)
2-1/2 lbs. ground turkey
8 oz. sliced white button mushrooms (may use crimini or baby bellas)
1/4 tsp. minced fresh garlic
1 Tbsp. chili powder
1-1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/8 tsp. garlic powder
1 cup shredded cheddar cheese
1/2 cup sour cream
4 oz. cream cheese, cut into small pieces
1 Tbsp. fresh chopped parsley (optional for garnish)


Directions:

Heat the oil in a large skillet over medium-high heat. Add the celery, onions, and peppers and cook until slightly tender. Add the ground turkey and cook until browned. If there is any excess fat, drain off with a spoon. Next add the mushrooms, garlic, and seasonings and simmer for 4 – 5 minutes, stirring constantly. Remove from the heat, stir in the cheddar cheese, sour cream, and cream cheese and serve garnished with fresh chopped parsley if desired. Serves 8.
