My husband loves my peach cobbler. I make it whenever he wants one and it usually lasts for a few days because I make a huge pan. He can eat it everyday until it’s gone, but I have to take a break. Instead of me having to make a huge pan the next time he wants one, I’ve come up with a recipe that can be made in single servings (and one that he can easily make himself). It literally takes just a few minutes from start to finish. Enjoy!
3-Minute Microwave Peach Cobbler
Serves 2
Ingredients
- 1 ½ Cups Frozen Peaches
- 3 Tbsp. Light Brown Sugar
- 1 Tsp. Ground Cinnamon
- 1 Tbsp. Butter
- 2 Tbsp. All-purpose Flour
- 2 Tbsp. Milk
- 1 Tbsp. Granulated Sugar
- ¼ Tsp. Vanilla Extract
- ¼ Tsp. Baking Powder
- Pinch of Salt
- In a small microwavable bowl, combine peaches, 2 tbsp. brown sugar, and ½ tsp. cinnamon.
- Heat in microwave on high for 1 ½ minutes or until peaches are completely defrosted.
- Stir mixture.
- Place butter into a microwavable ramekin.
- Heat on high for 30 seconds or until butter is completely melted.
- Evenly pour peach mixture over butter.
- Set aside.
- In a small mixing bowl mix flour, milk, ½ tsp. cinnamon, granulated sugar, extract, baking powder, and salt.
- Spread flour mixture on top of peach mixture.
- Heat in microwave for 1 minute or until dough is done.
- Do not overcook.
- Remove from microwave and immediately sprinkle 1 tbsp. brown sugar on top of cobbler.
