Ingredients
- 1 Package Ore-Ida® Steam n’ Mash Cut Russet Potatoes
- 6 Slices Bacon, minced
- 1/2 Cup Sliced Celery
- 2 Tablespoons Sugar
- 1 1/2 Tablespoons Flour
- 1 1/2 Teaspoons Salt
- 1/2 Teaspoon Celery Seed
- 1/3 Cup Heinz® Apple Cider Vinegar
- 2 Hard Boiled Eggs, sliced
- 1/4 Teaspoon Ground Paprika
Instructions
- Microwave Potatoes according to package instructions, but do not mash.
- Meanwhile, in a large skillet over medium heat, cook bacon for 2 minutes. Add celery and cook for another 3 to 4 minutes, or until bacon is crisp. Remove from skillet. Drain bacon on paper towels if needed, reserving 1-1/2 Tbsp. of drippings.
- Heat reserved bacon drippings in the same skillet over medium heat. Add sugar, flour, salt and celery seed. Add Vinegar and 2/3 cup of water, and cook for 3 to 4 minutes, stirring until thickened and smooth. Remove from heat, and stir in bacon and celery.
- To serve, mix together hot Potatoes and warm dressing mixture in a large bowl, and toss lightly. Garnish with egg slices and sprinkle with paprika.
