Ingredients:
1 (1-lb.) box of penne, cooked and rinsed
1 large jar good-quality Alfredo sauce
1 lb. grilled chicken, diced
1 cup frozen cauliflower, thawed and roughly chopped
1 (8-oz.) package frozen chopped spinach, thawed and squeezed dry
1 (12-oz.) can diced tomatoes, drained
1 Tbsp. fresh oregano, chopped
1 Tbsp. fresh basil, chopped
1 Tbsp. fresh thyme, chopped
2 cups mozzarella, shredded
3/4 cup Gorgonzola, crumbled
1 cup seasoned bread crumbs
Directions:
Preheat the oven to 350°F. Grease a large baking dish.
Combine the penne, sauce, chicken, cauliflower, spinach, tomatoes, herbs, and mozzarella in a large bowl.
Transfer the mixture to the baking dish and top with gorgonzola and bread crumbs.
Bake in the preheated oven for 20 - 25 minutes, or until hot.
