Boneless New York Roast


Ingredients

boneless New York roast, approx. 3.5-4 lbs
2 tbsp kosher salt
2 tbsp freshly ground black pepper

Instructions

  1. Remove roast from refrigerator and season with salt and pepper. Allow to sit at room temperature for 1 hour prior to roasting.
  2. Preheat oven to 450°F.
  3. Put roast into heavy roasting pan and place oven-proof thermometer into the thickest part of the roast.
  4. Roast at 450°F for 30 minutes, then reduce temperature and allow to cook until internal temperature reaches 135°F, approx. 1 hour and 5 minutes.
  5. Remove from oven and let rest uncovered for 15 to 20 minutes prior to carving.
