Surprising Peach Upside-Down Cake

Ingredients:

5 cups peeled and sliced peaches
1 small box orange flavored gelatin
1 cup sugar
3 cups mini marshmallows
1 white cake mix

Mix Cake Mix according to package directions (or your favorite white cake recipe)
Grease a 9×13 pan, then spread the peaches across the bottom of the pan. Combine the gelatin and sugar, and sprinkle across the top of the peaches. Spread marshmallows on top, then pour the prepared cake batter over everything. Bake at 350 for about an hour, or until the cake tests done when a toothpick inserted in the center comes out clean. Cool slightly, then invert onto a platter to serve. Serve warm or cold, with whipped cream if desired.
Because we like the peaches so well, we sometimes put a few extra in, and bake it in a 10×15″ cake pan. We also really like to make this recipe using fresh rhubarb and strawberry gelatin instead of peaches and orange gelatin. One of my favorite parts about it is that the marshmallows float up into the cake batter, and you get a nice caramelized crust on the cake :)
