Cheese Cups with Fresh Tomato Salsa


This is a fast and easy recipe that will make your guests feel like you spent hours preparing this. It not only looks great but tastes great as well. These are perfect for summer time, or any time and kids love them too!

Ingredients



1 cup Parmesan cheese (finely grated) 2 cups chopped vine-ripened tomatoes 1/2 cup small diced red onions 1/2 fresh jalapeno, seeded and cut into small dice (optional) 1/4 cup loosely packed chopped fresh rosemary, cilantro, basel, parsley or dill leaves 1 chopped garlic clove Salt Freshly ground black pepper 1 T fresh lemon or lime juice 1/2 T extra-virgin olive oil









Instructions



For the Cheese Cups: Heat up a non stick skillet. While heating, lightly toss some finely chopped herbs (your choice) with the grated Parmesan cheese. Take an empty shot glass and turn it upside down onto a plate. Take a spoonful of the cheese mixture and put it the hot pan. When the cheese has melted and starts to brown remove with a spatula and carefully drape over the shot glass. Use your fingers to gently shape the cups. When cup is cool to the touch and firm remove and do the next one. Turn each cup over and set aside onto a decorative plate. For the Salsa: Mix the tomatoes, onions, jalapeno (if using) herbs, garlic, salt to taste, black pepper and lemon (or lime) juice together and let rest for 15 minutes. Remove any excess liquid. Gently spoon salsa into the cups and enjoy!
