Sausage & Triple Cheese Lasagna Roll Ups


Ingredients
  • 8 lasagna noodles
  • 3/4 lb sausage
  • 1/2 large onion finely chopped
  • 2 cloves garlic minced
  • 1 cup mozzarella shredded
  • 1 cup provel ropes or provolone shredded
  • 1/2 cup fresh grated Parmesan
  • 2 cups marinara sauce
  • 2 tablespoons fresh chopped parsley
Instructions
  1. Cook lasagna noodles according to box directions.
  2. Brown sausage in large skillet over medium heat. Add onion and cook 2 minutes. Add garlic and cook 1 minutes.
  3. Preheat oven to 350 degrees.
  4. Lay noodles out on large prep area. Divide sausage mixture over the noodles; spreading evenly. Now spread 1/2 of each cheese over the noodles. Roll the noodles up and place seam side down in casserole coated with nonstick cooking spray. Top with remaining cheese and marinara.
  5. Bake for 30 minutes or until cheese is light browned. Sprinkle with parsley.
