So I got myself a little basil plant to sit on my window seal and what better way to start using it by making a bruschetta turkey burger! The plant itself actually came in a pack of two with simple instructions… Cover the roots with water, and don’t let her get thirsty. Plus, the plants were the same price as a small bunch anyways. Makes perfect sense to me.
Ingredients:
- 2 Roma tomatoes
- 2/3 cup diced red onions
- 2 cups fresh basil leaves, chopped
- 1/4 balsamic vinegar
- 2 lbs ground turkey
- 1 packet of italian seasoning
- 1 cup low fat shredded mozzarella cheese
- 1/3 cup diced red onion
- 6 romaine leaves
So, all you have to do to make the topping is mix together tomatoes, 2/3 cup red onions, basil, balsamic and salt and pepper. Easy. For the burgers, this is the seasoning I used and it came out SO GOOD! Mix well – turkey, seasoning, mozzarella cheese, and red onions. Make 6 equal patties and cook on medium – high heat, about 4-5 minutes each side. Tear the romaine leaves in half and lay on a plate… top with the burger and bruschetta. Enjoy!
