"Bread Dumplings"
(thanks Kevin for this recipe)
2 large Eggs
3 tsp Salt
1 c Milk
3 c Flour
3 or 4 slices White Bread ( dried & cubed into 1/2" cubes. If not day old, you can either... slightly toast til dry then cube or cube then microwave til dried usually just a couple min. is fine).
Beat eggs w/salt. Let stand for about 5 min. Add milk & flour and beat w/WOODEN spoon until bubbles form in the dough. Fold-in the bread cubes to thorough mix. Let stand for 20- 30 min. Form 5 oblong (egg shape but doesn't have to be eggxactly {that's the only thing I added}) with your hands. Drop into salted boiling water (use a canning size pot, tall one if you have one), cover and reduce heat to low, until dumpling rises to top of pot, usually in about 15 min. Scoop out w/a slotted spoon, slice and .....ENJOY!!!
