3>Ingredients
4 Tbsp 100% Organic Extra Virgin Olive oil
1 kg - 2 lb mixed fish
200 g - 1 cup Clams
1 medium onion chopped
1 celery chopped
1 carrot pieces
4 tablespoons chopped parsley
120 ml - ½ cup dry white wine
3 tomatoes into chunks
2 Garlic cloves, chopped
1.5 lt - 1 ½ quart boiling water
Salt
Black pepper
Preparation
Clean the fish and cut into large pieces
Rinse well with cold water.
Heat the extra virgin olive oil in a large saucepan and add the onion until browned.
Add the celery and carrot and cook for another 5 min. Add the parsley.
Pour the wine into the pan, raise the heat and cook until it is reduced by half. Add the tomatoes and garlic. Cook for 3 min, stirring occasionally. Add boiling water and brought to a boil. Cook over medium heat for 15 min.
Add the fish and clams then cook until the fish are tender. Season with salt and black pepper.
Serve hot with raw extra virgin olive oil.
