Yummy Tapioca Pudding

Scrumptious Pudding Recipe: Sweet Tapioca

Tapioca Pudding


Ingredients
  • 1/2 cup small pearl tapioca
  • 3 cups whole milk
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 2 teaspoons lemon zest
Directions
  1. Combine the tapioca, milk, and salt in a pan over medium high heat. Stir until boiling. Simmer for 5 minutes, uncovered, on the lowest heat setting your stove allows, adding sugar gradually.
  2. Beat the eggs in a separate bowl. Mix in some of the hot tapioca very slowly.
  3. Transfer the eggs to the pan with the tapioca. slowly bring the mixture to a low boil, stirring constantly until you get a nice, thick pudding consistency. Cool for 15 minutes. Add the vanilla and lemon zest. Serve warm or chilled.
  4. Enjoy!
