PERFECT PEACHES w/ CRUMB TOPPING CAKE:
Ingredients
- 1 3/4 c unsifted flour
- 3/4 c sugar
- 1/2 tsp salt
- 1 Tbsp dry yeast
- 2 Tbsp margarine, softened
- 1/2 c hot tap water
- 1 egg at room temperature

- 1/4 c brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 Tbsp margarine
- 1 can(s) 16 oz. drained sliced peaches
- confectioners sugar frosting

Directions
1. Combine 1/2 cup flour, sugar,salt and undissolved yeast. 2. Add 2 tablespoons softened margarine and hot tap water to dry ingredients. Beat 2 minutes at medium speed, scrape sides often
3. Add egg and 1/2 cup flour, beat on high 2 minutes
4. stir in 1/2 cup flour to make stiff batter
5. spread in 9" greased baking pan.
6. Combine remaining 1/4 cup flour, brown sugar, cinnamon, nutmeg and cut in 2 tablespoons margarine until crumbly. Sprinkle over cake
7. Arrange peach slices over top
8. Cover and let rise 1 hour or until doubled in draft free, warm place.
9. Bake 400 degrees 25 minutes or until done. Cool in pan 10 minutes, then turn onto wire rack or serving platter ( I kept mine in baking dish)
10. Drizzle with confectioners sugar frosting.....ENJOY!!!
